Hedgehog, stewed or fried, is considered a national dish among some European gypsies. Rooted in survival during persecution, especially in Poland and the Baltic regions, families hid in forests and prepared hedgehog for sustenance. Wrapped in clay and baked, the clay removes the spines. The dish remains a symbol of endurance and resourcefulness.
